In the early 1970s he held the post of organ scholar at Christ Church while working with Simon Preston. Between 1974 and 1978 he served as assistant organist at Canterbury Cathedral before taking up the role of Master of Music at St. Albans Cathedral. In 1985 he rejoined Christ Church, remaining its organist and music tutor until stepping down in 2018.

Darlington's discography exceeds sixty albums and has earned him a Classical BRIT Award, a Grammy nomination, and repeated Gramophone nominations. He has toured internationally both with the Christ Church Choir and in solo organ recitals. Among his collaborators have been the Australian Brandenburg Orchestra, Placido Domingo, Jose Carreras, and numerous other artists. His programming spans every historical period, and he has partnered with living composers including John Tavener, Judith Weir, and Howard Goodall. He remains active as a guest conductor and lecturer at leading institutions such as the University of Cincinnati, the University of Western Australia, and Oxford University.
